One of my experimental dish turned out to be quite edible. So go ahead and try it.
My measurements are approximate, so add as per your requirements.

Ingredients:

1 bunch Palak (Spinach)
2 big Mushroom
2 medium size Potato
2 medium size Onion
1 1/2 tomato
1 tsp garlic paste
Chilly Powder
Dhania Jeera Powder
a pinch Haldi
Salt
2 -3  tblsp Oil
2-3 tsp milk or cream (Optional)

Instruction:

  1. Heat Oil (medium flame)
  2. Fry potato till they turn light brown (as per my observation, potato if added later don't cook properly, hence cut them in thin slices/cubes and first fry them.)
  3. Then add chopped onion. Saute till they become soft and transparent.
  4. Now add garlic paste (Paste if added before putting onion, tends to burn and stick, so to avoid add it later.) Saute till they turn light brown.
  5. Add chopped mushroom, saute till water leaves and they change color.
  6. Now add chopped Palak. Keep Stirring. Once the water from palak starts drying add finely chopped tomatoes.
  7. Put all the dry spices and salt. Cook on slow flame.
  8. Cover and cook till oil separates and tomato becomes soft.
  9. Before taking off you may put milk/cream/coconut milk.
