Today we had
to go to my older daughter’s school for PTM (Parents –Teachers –Meeting). And
after that when we came home I didn’t want to go to the market. So I rummaged
through the fridge and found the following veggies and I created this
Things I found:
2 brinjal
2 tomatoes
1 capsicum
Approx. 150g
shelled Green peas
4-5 Mushrooms
1 egg
2-1/2 medium
size onion
2 big
tomatoes
1 or 2
potatoes (if you are a potato lover like me add 2)
1 tsp garlic
paste
1 tblsp
maggi bhuna masala
Salt
How did I make:
- Heat Oil in a pressure cooker
- Put Onion and sauté till it becomes soft and transparent.
- Now add garlic (ginger if you like) sauté till it becomes brown
- Then add brinjal, capsicum, potatoes, mushrooms and toss till mushroom becomes brown and its water dries.
- Now put Maggi Bhuna masala paste. Cook for a min.
- Add all dry spice powder. Mix for 1-2 sec
- Then add peas and tomatoes.
- Add salt and water (say about ¼ glass)
- Cover and cook for 2 mins after 1 whistle.
- After you open the lid, you will see little water, so put it back on slow flame and when you see bubbles add beaten egg (Pour from a height). You will see frothy egg layer.
- Mix it well and garnish with coriander.
- You can add lemon juice too.
- Serve hot with Chappatis.
You can add any vegetable of your liking, and in any quantity.
The other day I cooked using #Paneer #Mushroom and #Peas
Here I also added 1 1/2 tsp Pav bhaji masala. As my hubby wanted it more spicy.
